Zucchini & Tomato Gratin with Fresh Basil

3 medium zucchini, thinly sliced

4 ripe tomatoes, thinly sliced

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped (plus extra for garnish)

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried Italian herbs (oregano, thyme)

Salt and pepper to taste

1 cup breadcrumbs (optional for extra crunch)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with a bit of olive oil.

    Prepare Zucchini and Tomatoes: Wash and slice the zucchini and tomatoes into thin rounds, about 1/4 inch thick.

      Sauté Garlic: In a small skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant, ensuring it doesn’t burn.

        Layer the Vegetables: In the greased baking dish, arrange a layer of zucchini slices at the bottom. Follow with a layer of tomato slices. Sprinkle a bit of salt, pepper, and half of the sautéed garlic over the top. Add a sprinkle of chopped basil.

          Add Cheese: Evenly distribute half of the mozzarella and half of the Parmesan cheese over the veggies. Repeat the layering process (zucchini, tomatoes, seasonings, basil, and cheese) until all the ingredients are used, finishing with a generous layer of cheese on top.

            Breadcrumb Topping (Optional): If you like a crunchy topping, mix the breadcrumbs with the remaining olive oil, Italian herbs, salt, and pepper. Spread this mixture evenly over the top layer of cheese for that extra crunch.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes. After that, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the vegetables are tender.

                Garnish and Serve: Once baked, remove the dish from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
