4 medium zucchinis

1 cup fresh basil leaves

1/3 cup pine nuts (toasted if desired)

2 cloves garlic

1/2 cup Parmesan cheese, grated

1/2 cup olive oil (extra virgin)

Salt and pepper to taste

Cherry tomatoes (for garnish, optional)

Fresh mozzarella balls (for garnish, optional)

Instructions
 

Prepare the Zucchini Noodles:

    - Rinse the zucchinis under cold water. Cut off the ends and use a spiralizer (or a vegetable peeler) to create noodles from the zucchinis. Set them aside on a clean towel to absorb excess moisture.

      Make the Pesto Sauce:

        - In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, and grated Parmesan cheese. Pulse until the ingredients are coarsely chopped.

          - While the processor is running, gradually add the olive oil in a steady stream until the mixture is smooth and well combined. Season with salt and pepper to taste. Adjust the consistency by adding more oil if necessary.

            Cook the Zucchini Noodles:

              - In a large skillet, heat a drizzle of olive oil over medium heat. Add the zucchini noodles and sauté for about 2-3 minutes until they are just tender but still slightly crunchy (al dente). Be careful not to overcook them to avoid a soggy texture.

                Combine:

                  - Remove the skillet from heat and add the prepared pesto sauce. Toss everything together until the zucchini noodles are well coated in the pesto.

                    Serve:

                      - Plate the zucchini noodles and top with halved cherry tomatoes and fresh mozzarella balls if desired. Drizzle with a little extra olive oil and sprinkle with more Parmesan cheese before serving.
