Zucchini Lasagna Roll-Ups

3 medium zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (homemade or store-bought)

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp crushed red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Prepare the Zucchini: Using a vegetable peeler or mandoline slicer, create thin strips of zucchini (about 1/8-inch thick). Lay them flat on a kitchen towel, sprinkle with salt, and let sit for about 20 minutes to draw out excess moisture.

    Make the Cheese Mixture: In a medium bowl, combine ricotta cheese, 1/2 cup shredded mozzarella cheese, grated Parmesan cheese, egg, garlic powder, dried oregano, crushed red pepper flakes, salt, and pepper. Mix well until all ingredients are well incorporated.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Assemble the Roll-Ups: After resting, pat the zucchini strips dry with paper towels. Take a zucchini strip, add about 1 tablespoon of the cheese mixture, and roll it up tightly starting from one end. Repeat with the remaining zucchini and filling.

          Prepare the Baking Dish: Spread 1 cup of marinara sauce evenly across the bottom of a 9x13 inch baking dish. Place the rolled-up zucchini seam-side down in the dish, fitting them snugly together.

            Top with Sauce and Cheese: Pour the remaining marinara sauce over the roll-ups, covering them completely. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before slicing and serving.
