2 medium zucchinis, grated

1 cup fresh corn kernels (or frozen, thawed)

1 cup grated Parmesan cheese

1/2 cup all-purpose flour

2 large eggs, beaten

1/4 cup breadcrumbs (preferably panko for extra crunch)

2 green onions, finely chopped

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

Prepare the Zucchini: In a clean kitchen towel, wring out the excess moisture from the grated zucchini to ensure your bites aren't too watery.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, corn, grated Parmesan cheese, flour, breadcrumbs, chopped green onions, minced garlic, oregano, salt, and black pepper. Stir until well combined. Finally, add the beaten eggs and mix until the mixture is cohesive.

      Form Bites: Using your hands, scoop out about 2 tablespoons of the mixture and form small patties. You should get around 12-15 bites, depending on size.
