Zucchini and Feta Bake with Chicken

2 large zucchinis, grated

1 cup feta cheese, crumbled

2 boneless, skinless chicken breasts, diced

1 cup cherry tomatoes, halved

1 small onion, finely chopped

2 cloves garlic, minced

1 egg, beaten

1/2 cup breadcrumbs (panko for extra crunch)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: In a large bowl, squeeze out excess moisture from the grated zucchinis using a clean kitchen towel. This will help prevent a watery bake.

      Cook the Chicken: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes. Remove from heat and let cool slightly.

        Sauté the Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-4 minutes.

          Mix Ingredients: In a large mixing bowl, combine the grated zucchini, cooked chicken, sautéed onion and garlic, cherry tomatoes, crumbled feta cheese, beaten egg, breadcrumbs, oregano, thyme, and additional salt and pepper. Mix until well combined.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

              Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the edges are bubbling.

                Cool and Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with fresh chopped parsley before serving.
