2 large flatbreads (store-bought or homemade)

1 cup cooked chicken breast, shredded

1 cup black beans, drained and rinsed

1 cup corn, fresh or frozen (thawed)

1 cup queso fresco cheese, crumbled

1 cup shredded mozzarella cheese

1 small red onion, thinly sliced

1 medium red bell pepper, thinly sliced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (optional)

Hot sauce, to taste (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken Mixture: In a medium bowl, combine the shredded chicken, black beans, corn, olive oil, chili powder, cumin, garlic powder, and a pinch of salt and pepper. Mix well until everything is evenly coated.

      Assemble the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Evenly distribute the chicken mixture over each flatbread. Make sure to leave a small border around the edges.

        Add the Vegetables: Top each flatbread with sliced red onion and bell pepper. Sprinkle the queso fresco and mozzarella cheese evenly over the top.

          Bake in the Oven: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly and the edges of the flatbreads are golden brown.

            Garnish and Serve: Once out of the oven, let the flatbreads cool for a couple of minutes. Garnish with freshly chopped cilantro and avocado slices, if using. Drizzle with hot sauce for an extra kick, if desired.
