1 cup jasmine rice

1 cup coconut milk

1 cup water

1 lime, zested and juiced

2 tablespoons brown sugar

1/2 teaspoon sea salt

1/4 teaspoon ground black pepper

1/4 cup chopped fresh cilantro

1/4 cup toasted shredded coconut (unsweetened)

Instructions
 

Rinse the Rice: Start by rinsing the jasmine rice under cold running water for 2-3 minutes to remove excess starch. This step ensures the rice cooks up fluffy and not sticky.

    Combine Liquids: In a medium pot, combine the coconut milk, water, lime juice, lime zest, brown sugar, sea salt, and black pepper. Stir well to dissolve the sugar and salt.

      Cook the Rice: Add the rinsed rice to the pot with the coconut mixture. Bring it to a gentle boil over medium heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-18 minutes, or until the rice is tender and has absorbed all the liquid.

        Let it Rest: Once cooked, remove the pot from heat and leave it covered for an additional 10 minutes to let the rice steam. This step ensures perfectly fluffy grains.

          Fluff the Rice: After resting, remove the lid and use a fork to fluff the rice gently. Fold in the chopped cilantro and toasted shredded coconut for added texture and flavor.
