1 ½ cups all-purpose flour

1 tablespoon poppy seeds

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

Zest of 2 lemons

¼ cup fresh lemon juice (about 2 lemons)

½ cup buttermilk

1 teaspoon vanilla extract

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with muffin liners or grease with cooking spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, poppy seeds, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, using a hand mixer or stand mixer, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
