Ingredients

1 pound lump crab meat, picked over for shells

1/2 cup crushed buttery crackers (like Ritz)

1/4 cup mayonnaise

1 large egg, beaten

2 tablespoons fresh parsley, finely chopped

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

Zest of 1 lemon

Juice of 1 lemon

3 cloves garlic, minced

1/2 teaspoon Old Bay seasoning (or to taste)

Salt and pepper to taste

1/4 cup bread crumbs (for coating)

2 tablespoons olive oil (for frying)

Lemon wedges (for serving)

Instructions

Prepare the Mixture: In a large mixing bowl, combine the lump crab meat, crushed buttery crackers, mayonnaise, beaten egg, parsley, Dijon mustard, Worcestershire sauce, lemon zest, lemon juice, minced garlic, Old Bay seasoning, and season with salt and pepper. Gently mix until all ingredients are well combined, being careful not to break up the crab meat too much.

Form the Cakes: Using your hands, form the crab mixture into patties, about 2-3 inches wide and 1 inch thick. Place the formed cakes on a plate or tray.

Chill: Cover the crab cakes with plastic wrap and refrigerate for at least 30 minutes. This helps the cakes hold their shape while cooking.

Coat the Cakes: After chilling, spread the breadcrumbs on a plate. Lightly coat each crab cake in the breadcrumbs, ensuring they are evenly covered.

Heat the Oil: In a large, non-stick skillet, heat the olive oil over medium heat.

Cook the Crab Cakes: Once the oil is hot, carefully add the crab cakes to the skillet. Cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Avoid overcrowding the skillet; you may need to work in batches.

Drain and Serve: Once cooked, transfer the crab cakes to a paper towel-lined plate to drain any excess oil. Serve warm with lemon wedges on the side for squeezing.

Enjoy: Pair your Zesty Lemon Garlic Crab Cakes with a fresh salad or a tangy dipping sauce for an extra burst of flavor!
