Zesty Italian Sausage and Pepper Bake

1 pound Italian sausage (mild or spicy, your choice)

2 tablespoons olive oil

1 large red bell pepper, sliced

1 large yellow bell pepper, sliced

1 large green bell pepper, sliced

1 medium onion, sliced

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for extra heat)

Salt and pepper to taste

1 can (14.5 oz) diced tomatoes, drained

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sausage: In a large skillet over medium-high heat, add the Italian sausage. Cook until browned on all sides, about 5-7 minutes. Remove from heat and let cool slightly before slicing into rounds.

      Sauté the Vegetables: In the same skillet, add olive oil and toss in the sliced bell peppers and onion. Sauté for about 5-6 minutes until they start to soften. Add minced garlic and cook for an additional minute until fragrant.

        Season the Mixture: Sprinkle the Italian seasoning, red pepper flakes (if using), salt, and pepper over the vegetables. Stir well to combine.

          Combine Ingredients: In a large mixing bowl, add the sautéed peppers and onions, sliced sausage, and drained diced tomatoes. Stir until everything is evenly mixed.

            Prepare for Baking: Transfer the sausage and vegetable mixture to a greased 9x13 inch baking dish. Spread it evenly across the dish.

              Add Cheese: Top the mixture with shredded mozzarella cheese evenly over the top.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbling and golden.
