2 cups cooked white or brown rice

1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 packet (1 oz) fajita seasoning mix

1 cup canned diced tomatoes (with juice)

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup sour cream

1 tablespoon lime juice

Fresh cilantro, for garnish

Salt and pepper, to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add the sliced bell peppers and onion, cooking until they start to soften (about 5-7 minutes). Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Cook Chicken: Add the diced chicken to the skillet, season with salt, pepper, and fajita seasoning. Cook until the chicken is no longer pink in the center (approximately 7-10 minutes).

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken and vegetables, diced tomatoes, corn, black beans, sour cream, and lime juice. Stir well until all ingredients are evenly mixed.
