2 cups mashed potatoes (prepared, cooled)

1 cup shredded sharp cheddar cheese

1-2 jalapeños, finely diced (adjust based on spice preference)

1/4 cup green onions, finely sliced

1/4 cup all-purpose flour

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Olive oil, for frying

Fresh cilantro, chopped (for garnish, optional)

Instructions
 

In a large mixing bowl, combine the cooled mashed potatoes, shredded cheddar cheese, diced jalapeños, green onions, flour, egg, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until the ingredients are evenly distributed and form a cohesive mixture.

    Next, preheat a skillet over medium heat and add a tablespoon of olive oil.

      With your hands, form the potato mixture into patties about 3 inches in diameter and 1/2 inch thick. You should be able to make about 8-10 cakes depending on size.

        Once the skillet is hot, carefully place 2-3 potato cakes into the pan (don’t overcrowd). Cook for 4-5 minutes on each side or until they are golden brown and crispy.

          Transfer the cooked cakes to a paper towel-lined plate to absorb excess oil, and repeat the process for the remaining cakes, adding more olive oil as needed.

            Serve the cakes warm, garnished with fresh cilantro if desired, and enjoy them with your favorite dipping sauce or sour cream!
