1.5 lbs (680g) boneless, skinless chicken thighs

1 cup plain Greek yogurt

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

Juice of 1 lemon

Zest of 1 lemon

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

½ teaspoon ground turmeric

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Prepare the Marinade: In a large bowl, whisk together the Greek yogurt, olive oil, minced garlic, grated ginger, lemon juice, and lemon zest until well combined.
