2 pounds fresh ripe figs, stems removed and quartered

1 cup granulated sugar (you can adjust based on sweetness preference)

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1 teaspoon vanilla extract (optional for a hint of flavor)

1/2 teaspoon ground cinnamon (optional)

1/4 teaspoon sea salt

1/2 cup water

Prepare the Figs: Rinse the figs under cold water. Remove the stems and cut each fig into quarters. Set aside in a large mixing bowl.

    Combine Ingredients: In a large pot, combine the quartered figs, sugar, lemon juice, lemon zest, and the water. Stir well to combine and let it sit for about 30 minutes. This will help draw the juices from the figs and dissolve the sugar.

      Cook the Mixture: After the resting period, place the pot over medium heat. Bring the mixture to a gentle boil, stirring frequently. Once it starts boiling, reduce the heat to low and allow it to simmer for about 30-40 minutes.

        Check for Consistency: As the jam cooks, the figs will break down. Use a potato masher or a fork to help mash up the figs to your desired chunkiness. If you prefer a smoother jam, you can use an immersion blender after cooking.

          Add Spices: If using, stir in the vanilla extract, cinnamon, and sea salt about 10 minutes before removing from heat. Taste the mixture and adjust the sweetness if necessary.

            Jar the Jam: Once the jam has thickened (it should coat the back of a spoon), carefully pour it into sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims of the jars with a clean cloth before sealing with lids.

              Seal & Store: Let the jam cool to room temperature. For long-term storage, process jars in a boiling water bath for 10 minutes to seal. If not canning, refrigerate the jam and consume within a couple of weeks.
