Ingredients

2 cups white chocolate chips

1 cup sweetened condensed milk

1 tsp vanilla extract

1/4 tsp salt

1 cup shelled pistachios, roughly chopped

1/2 cup dried cranberries or cherries (optional, for garnish)

Extra chopped pistachios (for garnish)

Instructions

Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment with cooking spray or butter.

Melt the White Chocolate: In a medium-sized saucepan over low heat, combine the white chocolate chips and sweetened condensed milk. Stir continuously until the chocolate is completely melted and the mixture is smooth.

Add Flavorings: Remove the saucepan from heat. Stir in the vanilla extract and salt until well incorporated.

Incorporate Pistachios: Gently fold in the chopped pistachios, making sure they are evenly distributed throughout the mixture.

Add Garnish (Optional): If you’re using dried cranberries or cherries, fold them in at this stage for an added burst of color and flavor.

Pour Mixture into Pan: Pour the fudge mixture into the prepared baking dish, spreading it out evenly with a spatula.

Garnish: Sprinkle the extra chopped pistachios over the top for an elegant presentation.

Chill: Allow the fudge to cool at room temperature for about 30 minutes. Afterwards, transfer it to the refrigerator and let it set for at least 2 hours, or until firm.

Cut and Serve: Once set, use the parchment overhang to lift the fudge from the pan. Cut into squares using a sharp knife. Serve chilled or at room temperature, and enjoy your delightful treat!
