Ingredients

2 cups rolled oats

1 cup almond flour

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/3 cup melted coconut oil

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped nuts (e.g., walnuts or pecans, optional)

1/2 cup dried fruit (e.g., raisins or cranberries, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, baking soda, and salt. Stir until fully blended.

Combine Wet Ingredients: In another bowl, whisk together the honey or maple syrup, unsweetened applesauce, melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture into the bowl of dry ingredients and stir until fully combined. If desired, fold in the chopped nuts and dried fruit.

Transfer to Pan: Spread the mixture evenly into the prepared baking pan, pressing down firmly to ensure it holds together.

Bake: Bake in the oven for 25-30 minutes, or until the bars are lightly golden on top and a toothpick inserted in the center comes out clean.

Cool and Slice: Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper overhang. Transfer to a wire rack to cool completely before slicing into bars.

Serve and Enjoy: These warm cinnamon oat bars can be enjoyed warm or at room temperature. Store leftovers in an airtight container at room temperature for up to a week.
