Ingredients

2 large eggs, separated

30g (2 tbsp) granulated sugar

30g (2 tbsp) milk

20g (1.5 tbsp) all-purpose flour

1/4 tsp baking powder

1/4 tsp vanilla extract

Pinch of salt

Cooking oil or butter, for frying

Powdered sugar, for dusting

Fresh fruits, whipped cream, or syrup, for serving (optional)

Instructions

Prepare the Egg Whites: In a clean mixing bowl, add the egg whites and a pinch of salt. Using an electric mixer, whip them on medium-high speed until they become frothy. Gradually add the granulated sugar, beating until stiff peaks form. This should take about 3-4 minutes. Set aside.

Mix the Egg Yolks: In another bowl, whisk the egg yolks, milk, and vanilla extract together until smooth.

Combine Dry Ingredients: Sift the all-purpose flour and baking powder into the egg yolk mixture. Gently mix until fully incorporated and you have a smooth batter.

Fold in the Egg Whites: Carefully fold 1/3 of the beaten egg whites into the egg yolk mixture using a spatula. Repeat this process until all the egg whites are incorporated. Be gentle to maintain the fluffiness.

Preheat Your Pan: Heat a non-stick skillet over low heat and lightly grease it with cooking oil or butter.

Cook the Pancakes: Using a large spoon or a ladle, scoop a generous portion of the batter and place it onto the skillet. Repeat, leaving space between each pancake. Cover with a lid to trap steam and cook for about 4-5 minutes. Check the bottoms; they should be a light golden brown.

Flip and Cook: Carefully flip the pancakes using a spatula or by inverting onto another plate, then slide back onto the skillet. Cook for another 2-3 minutes, covered, until fluffy and cooked through.

Serve: Stack the pancakes on a plate and dust with powdered sugar. Serve warm with optional toppings like fresh fruits, whipped cream, or syrup. Enjoy your incredibly fluffy soufflé pancakes!
