Separate the Eggs: Begin by carefully separating the egg yolks from the egg whites. Place the egg whites in a large mixing bowl and the egg yolks in a smaller bowl.

    Mix Egg Yolks: In the bowl with the egg yolks, add the granulated sugar, salt, and vanilla extract. Mix well until it becomes a smooth and creamy mixture.

      Combine Dry Ingredients: Sift in the flour and baking powder to the egg yolk mixture. Then add the milk and whisk until combined and free of lumps. Set this mixture aside.

        Whip Egg Whites: In the bowl with the egg whites, use a hand mixer or stand mixer to beat the egg whites until stiff peaks form. This should take about 5 minutes. Be patient, as this step is crucial for the fluffiness.

          Fold Ingredients Together: Gently fold the egg whites into the egg yolk mixture in three parts. Be careful not to deflate the egg whites; use a spatula and a gentle folding motion to maintain the airiness.

            Prepare the Skillet: Heat a non-stick skillet over low heat and lightly grease it with oil or butter. It’s important to keep the heat low to ensure the pancakes cook slowly and rise properly.
