1 cup brown or green lentils, rinsed

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 medium potato, peeled and cubed

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon ground cumin

1 bay leaf

Salt and pepper to taste

2 cups fresh spinach or kale, chopped

Fresh parsley for garnish (optional)

Juice of 1 lemon

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Vegetables: Add the diced carrots, celery, and potato to the pot. Cook for another 5-7 minutes, stirring occasionally, until the vegetables start to soften.

      Mix in Lentils and Tomatoes: Add the rinsed lentils, diced tomatoes (with their juices), vegetable broth, thyme, cumin, bay leaf, and season with salt and pepper. Bring the mixture to a boil.

        Simmer the Soup: Once boiling, reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the lentils and vegetables are tender. Stir occasionally and check for doneness.
