1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (almond, soy, or oat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

1/2 cup hot sauce (use your favorite variety)

1/4 cup vegan butter, melted

Optional: Celery sticks and vegan ranch for serving

Preheat the Oven: Before you start preparing the wings, preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Cauliflower: In a large mixing bowl, combine the flour, plant-based milk, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Whisk until smooth to form a batter.

      Coat Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off. Then, roll it in breadcrumbs, pressing gently to ensure they adhere well.

        Arrange on Baking Sheet: Place the coated cauliflower wings onto the prepared baking sheet in a single layer. Make sure there is some space between each wing for even cooking.

          Bake First Batch: Bake in the preheated oven for 20-25 minutes, or until the wings are golden brown and crispy.

            Make Buffalo Sauce: While the cauliflower is baking, prepare the buffalo sauce by mixing the melted vegan butter with the hot sauce in a small bowl. Adjust the hot sauce according to your spice preference.

              Toss in Buffalo Sauce: Once the cauliflower wings are done baking, remove them from the oven and immediately toss them in the buffalo sauce until completely coated.

                Bake Again: Return the sauced wings to the baking sheet, and bake for an additional 10-15 minutes, allowing the sauce to caramelize a bit and enhance the crispiness.
