1 sheet of puff pastry, thawed

1 cup fresh seasonal fruits (e.g., berries, peaches, or apples), chopped

2 tablespoons unsalted butter

1/4 cup brown sugar

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1 egg, beaten (for egg wash)

Fresh mint leaves (for garnish)

Prepare the Fruit Topping: In a medium skillet over medium heat, melt the butter. Add the brown sugar, vanilla extract, and cinnamon. Stir until the sugar has dissolved and the mixture is bubbling lightly.

    Cook the Fruits: Add the chopped fruit to the skillet. Cook for about 3-5 minutes until the fruit is slightly softened and coated in the caramel sauce. Remove from heat and let cool slightly.

      Preheat Oven: Preheat your oven to 400°F (200°C).

        Prepare Puff Pastry: On a floured surface, roll out the thawed puff pastry sheet to about 1/8 inch thickness. Cut out circles that are about 4-5 inches in diameter.
