1 pound large shrimp, peeled and deveined

1 cup chicken broth

2 teaspoons Creole seasoning (or to taste)

1 teaspoon dried thyme

1 teaspoon paprika

1 bay leaf

1 cup corn (fresh, frozen, or canned)

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Salt and pepper, to taste

Cooked rice, for serving (optional)

Instructions
 

Prepare the Aromatics: In a large heavy pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery, cooking until the vegetables are softened, about 5-7 minutes.

    Add Garlic: Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

      Incorporate Tomatoes: Add the diced tomatoes (with juices), tomato sauce, and chicken broth. Stir well to combine.
