Tuscan Creamy Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup fresh spinach, roughly torn

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Shrimp: In a large skillet over medium heat, heat the olive oil. Add the shrimp and season with salt and pepper. Cook until the shrimp are pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sun-dried tomatoes and spinach, cooking until the spinach wilts, approximately 2 minutes.

        Combine Ingredients: Lower the heat and pour in the heavy cream, stirring to combine. Allow to simmer gently for about 2-3 minutes, thickening slightly. Then, gradually stir in the Parmesan cheese until melted and smooth. If desired, mix in red pepper flakes for a spicy kick.

          Finish the Dish: Add the cooked fettuccine and shrimp to the skillet, tossing everything together until well combined. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached. Adjust seasoning with salt and pepper if necessary.
