Turkey Skewers with Watermelon Salsa

For the Turkey Skewers:

1.5 lbs ground turkey

1/2 cup breadcrumbs (preferably whole grain)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1/4 cup fresh parsley, chopped

1 egg, beaten

Skewers (soaked in water for 30 minutes if wooden)

For the Watermelon Salsa:

2 cups seedless watermelon, diced

1/2 small red onion, finely chopped

1 medium jalapeño, seeded and minced (optional for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions
 

Prepare the Turkey Mixture:

    In a large mixing bowl, combine the ground turkey, breadcrumbs, chopped onion, minced garlic, smoked paprika, ground cumin, salt, black pepper, oregano, parsley, and beaten egg. Mix until well combined.

      Form the Skewers:

        Preheat your grill or grill pan to medium-high heat. Take a handful of the turkey mixture and mold it around each soaked skewer, forming elongated patties. Ensure even distribution for even cooking. Set aside.

          Make the Watermelon Salsa:

            In a separate bowl, combine the diced watermelon, red onion, jalapeño (if using), and cilantro. Squeeze the lime juice over the mixture, season with salt and pepper, and gently toss to combine. Adjust seasoning to taste.

              Grill the Turkey Skewers:

                Lightly oil the grill grates to prevent sticking. Grill the turkey skewers for about 10-12 minutes, turning occasionally, until they are cooked through and have nice grill marks. The internal temperature should reach 165°F (75°C).

                  Serve:

                    Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with a generous scoop of watermelon salsa on top or on the side for dipping.

                      Garnish (optional):

                        Garnish with additional fresh parsley or cilantro, and lime wedges for extra flavor.
