1 lb sushi-grade tuna, diced into small cubes

2 cups sushi rice

3 cups water

¼ cup soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp honey or agave syrup

1 avocado, sliced

1 small cucumber, thinly sliced

1 radish, thinly sliced

1 small bunch green onions, chopped

1 tbsp sesame seeds (white or black, or a mix)

Seaweed salad or nori sheets, cut into strips

Pickled ginger (optional)

Sriracha or spicy mayo (optional for heat)

Instructions
 

Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker or saucepan. For a rice cooker, follow the manufacturer's instructions. For a saucepan, bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes or until water is absorbed. Let it sit covered for 10 minutes off the heat.

    Prepare the Seasoning: In a small bowl, mix the soy sauce, sesame oil, rice vinegar, and honey/agave syrup to make a marinade.

      Marinate the Tuna: In a medium bowl, toss the diced tuna with half of the marinade (reserve the other half for serving). Let it marinate for about 10-15 minutes at room temperature while you prepare the other ingredients.

        Assemble the Bowls: Fluff the cooled sushi rice with a fork and evenly distribute it into serving bowls. Top with the marinated tuna, followed by the sliced avocado, cucumber, radish, and a sprinkle of sesame seeds.

          Finishing Touches: Garnish your poke bowls with chopped green onions, strips of seaweed salad or nori, and pickled ginger if desired. Drizzle with the remaining marinade and add Sriracha or spicy mayo if you like some heat.

            Serve and Enjoy: Serve the bowls immediately for the freshest taste!
