8 oz (225g) pasta (preferably fettuccine or penne)

2 tablespoons olive oil

1 small zucchini, sliced

1 small yellow squash, sliced

1 bell pepper (red, yellow, or orange), sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions
 

Cook the Pasta: Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Add Vegetables: Add the zucchini, yellow squash, bell pepper, and broccoli to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender yet still crisp.

        Incorporate Tomatoes: Stir in the cherry tomatoes and cook for another 2 minutes, until they soften slightly. If you like a bit of heat, add red pepper flakes at this stage.

          Combine Pasta and Veggies: Add the cooked pasta to the skillet. Pour in a splash of reserved pasta water to help bind everything together. Toss to combine all ingredients. Season with salt and pepper to taste.

            Finish with Cheese: Sprinkle the grated Parmesan cheese over the pasta and toss once more to mix evenly.
