250g button mushrooms, sliced

1 medium onion, finely chopped

2 cloves garlic, minced

200ml heavy cream

100ml vegetable or chicken stock

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Cook the Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until they are al dente. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet. Sauté them for about 5-7 minutes until they are golden brown and tender.

        Prepare the Sauce: Pour in the vegetable or chicken stock and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.
