Ingredients
  

1 cup unsalted butter, softened

3/4 cup light brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup toffee bits (such as Heath bar bits)

1 cup sliced almonds, toasted

Sea salt, for topping (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Beat in the egg and vanilla extract, mixing until well combined.

        In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

          Fold in the toffee bits and sliced almonds until evenly distributed throughout the cookie dough.

            Scoop tablespoon-sized portions of the dough onto the prepared baking sheets, spacing them about 2 inches apart. Gently press down on each cookie to flatten slightly.

              If desired, sprinkle a small pinch of sea salt on top of each cookie for an extra flavor boost.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set. Be careful not to overbake.

                  Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
