3 large eggs, separated

3 tablespoons cream cheese, softened

1 tablespoon sweetener (granulated sugar, honey, or sugar substitute)

1/4 teaspoon baking powder

A pinch of salt

Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

    Whip the Egg Whites: In a large mixing bowl, combine the egg whites and a pinch of salt. Using an electric mixer, whip the egg whites on high speed until stiff peaks form (about 3-5 minutes).

      Mix the Egg Yolks: In a separate bowl, mix the egg yolks, cream cheese, sweetener, baking powder, and extract (if using) until smooth and well combined.

        Combine the Mixture: Gently fold the whipped egg whites into the yolk mixture, being careful not to deflate the egg whites. Use a spatula and fold in a figure-eight motion until just combined. The mixture should remain fluffy.

          Shape the Bread: Scoop the fluffy mixture into the prepared baking sheet, forming 3-4 equal mounds. Use the back of a spoon to shape them into rounds (about 1-inch thick).

            Bake: Place in the preheated oven and bake for 25-30 minutes, or until the tops are lightly golden and the bread is firm to the touch.

              Cool: Once baked, remove from the oven and let it cool for 10 minutes on the baking sheet before transferring to a wire rack.
