Ingredients

For the Meatballs:

1 lb ground beef (80/20 for juiciness)

1/2 lb ground pork

1/2 cup bread crumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

1 large egg

3 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Sauce:

2 cups marinara sauce (store-bought or homemade)

1 teaspoon red pepper flakes (optional for heat)

1 tablespoon olive oil

Salt and pepper to taste

For Assembly:

4 hoagie rolls (submarine or ciabatta)

2 cups shredded mozzarella cheese

Fresh basil leaves (for garnish, optional)

Extra Parmesan for topping

Instructions

Make the Meatballs:

    - In a large mixing bowl, combine ground beef, ground pork, bread crumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, and Italian seasoning. Season with salt and pepper. Mix until just combined; avoid over-mixing to keep the meatballs tender.

      - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

        - Roll the mixture into golf ball-sized meatballs and place them evenly spaced on the prepared baking sheet.

          Bake the Meatballs:

            - Bake the meatballs in the oven for about 20-25 minutes or until they are browned and cooked through (internal temperature should reach 160°F/70°C).

              Prepare the Sauce:

                - While the meatballs are baking, heat olive oil in a medium saucepan over medium heat. Pour in the marinara sauce, add red pepper flakes if using, and season with salt and pepper. Let it simmer for about 10 minutes until heated through and slightly thickened.

                  Combine Meatballs and Sauce:

                    - Once the meatballs are done, remove them from the oven and transfer them to the saucepan with the simmering marinara sauce. Gently toss to coat the meatballs evenly in the sauce.

                      Assemble the Subs:

                        - Slice the hoagie rolls lengthwise without cutting all the way through. Toast them in the oven for about 5 minutes until they’re lightly golden.

                          - Generously spoon 4-5 meatballs along with the marinara sauce into each hoagie roll. Top with a hearty handful of shredded mozzarella cheese and sprinkle extra Parmesan on top.

                            Melt the Cheese:

                              - Return the assembled subs to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                                Serve:

                                  - Remove from the oven, garnish with fresh basil leaves if desired, and serve immediately while they’re hot and cheesy!
