Ingredients

1 can (5 oz) tuna, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 celery stalk, finely chopped

1/4 small red onion, finely chopped

1/4 cup shredded sharp cheddar cheese

1/4 cup mayonnaise (optional for extra creaminess)

4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 tablespoon fresh parsley, chopped (optional)

Salt and pepper to taste

1/2 cup sliced tomatoes

1/2 cup sliced pickles (optional)

Instructions

Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, 2 tablespoons of mayonnaise, Dijon mustard, chopped celery, red onion, and shredded cheddar cheese. Stir until all ingredients are evenly mixed. Add salt and pepper to taste. For a creamier texture, you can incorporate the additional 1/4 cup of mayonnaise—this step is optional but recommended!

Toast the Bread: Preheat a skillet or griddle over medium heat. While it heats up, spread softened butter on one side of each slice of sourdough bread.

Assemble the Melts: Place the bread butter-side down on the skillet. Evenly distribute the tuna mixture over two slices of bread. If desired, layer sliced tomatoes and pickles on top of the tuna mixture for extra flavor and crunch. Top with the remaining slices of bread, butter-side up.

Grill to Perfection: Cook the tuna melts for about 3-4 minutes on the first side, or until golden brown. Carefully flip each melt and grill for another 3-4 minutes. Press down gently with a spatula to ensure an even grill and allow the cheese to melt beautifully.

Serve: Once both sides are golden brown and the cheese is melted, remove the melts from the skillet. Cut in half diagonally for a crispy presentation, and sprinkle with fresh parsley if using.

Enjoy: Serve warm with a side of chips, a fresh salad, or your favorite pickles!
