Ingredients

1 cup (226g) unsalted butter

2 cups (400g) granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup (130g) all-purpose flour

1 cup (85g) unsweetened cocoa powder

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup (170g) semi-sweet chocolate chips (optional)

1/2 cup (120ml) brewed coffee (optional for enhanced flavor)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper, allowing some overhang for easy removal.

Melt the Butter: In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar until well combined.

Add Eggs and Vanilla: Allow the butter-sugar mixture to cool slightly. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt until evenly combined.

Mix Wet and Dry Ingredients: Gradually add the dry mixture to the wet ingredients, stirring gently just until combined. Avoid overmixing. If using, fold in the chocolate chips and brewed coffee at this stage.

Transfer to Pan: Pour the batter into the prepared baking pan, spreading it evenly.

Bake the Brownies: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter). Check at the 25-minute mark.

Cool and Cut: Remove from the oven and let the brownies cool in the pan for about 10-15 minutes. Lift them out using the parchment paper, and let them cool completely on a wire rack. Once cooled, cut into squares.

Serve and Enjoy: Serve them as they are, or with a scoop of vanilla ice cream for an extra treat. Enjoy the soft, chewy goodness!
