2 pounds red potatoes, washed and cut into wedges

4 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon dried rosemary

½ teaspoon dried thyme

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, garlic powder, smoked paprika, rosemary, thyme, salt, and black pepper.

      Add the red potato wedges to the bowl and toss them until they are well coated with the oil and seasoning mixture.

        Spread the seasoned potato wedges evenly on a large baking sheet in a single layer.

          Roast in the preheated oven for 30-35 minutes, flipping them halfway through to ensure even crispiness.

            Once the potatoes are golden brown and crispy, remove them from the oven and let them cool for a few minutes.
