Ingredients
  

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1 cup bacon bits (cooked and crumbled)

1 cup green onions, chopped

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Optional: Sour cream for serving

Instructions
 

Sauté Aromatics: In a large pot, heat olive oil and butter over medium heat. Add the chopped onion and garlic, cooking until the onion is translucent, around 4-5 minutes.

    Cook Potatoes: Add the diced potatoes to the pot, stirring to coat them with the oil and cooking for about 2 minutes. Add the chicken or vegetable broth and bring to a boil.

      Simmer: Reduce heat to low and simmer the potatoes for 15-20 minutes, or until fork-tender.

        Blend Soup: Once the potatoes are tender, you can blend part or all of the soup to your desired consistency using an immersion blender (for a creamier texture) or by transferring it in batches to a traditional blender.

          Add Cream & Cheese: Stir in the heavy cream, shredded cheddar cheese, dried thyme, and season with salt and pepper. Allow the soup to heat through, stirring until the cheese is melted.

            Finish with Toppings: Serve hot and top each bowl with crumbled bacon, chopped green onions, and a dollop of sour cream if desired.
