1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons Thai red curry paste

4 cups vegetable or chicken broth

1 can (14 oz) coconut milk

1 bell pepper (red or yellow), sliced

1 cup carrots, sliced

1 cup snap peas

1 cup baby spinach

1 tablespoon soy sauce or tamari

1 tablespoon lime juice

1 tablespoon brown sugar (or coconut sugar)

Fresh cilantro, for garnish

Lime wedges, for serving

Optional: cooked tofu or chicken for added protein

Heat the Coconut Oil: In a large pot over medium heat, add the coconut oil. Once melted, add the diced onion and sauté for 3-4 minutes until translucent.

    Add Aromatics: Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

      Incorporate the Curry Paste: Add the Thai red curry paste to the pot and mix well, allowing it to cook for 1-2 minutes to enhance the flavors.

        Pour in the Broth and Coconut Milk: Slowly add the vegetable or chicken broth, followed by the coconut milk, stirring to combine. Bring the mixture to a gentle simmer.

          Add Vegetables: Once simmering, toss in the sliced bell pepper, carrots, and snap peas. Let the soup cook for about 8-10 minutes until the vegetables are tender but still vibrant.

            Finish with Spinach and Seasonings: Stir in the baby spinach, soy sauce, lime juice, and brown sugar. Cook for another 2-3 minutes until the spinach is wilted and everything is heated through.
