Tex-Mex Chicken Burrito Bowls

For the Chicken:

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Juice of 1 lime

For the Rice:

1 cup jasmine or brown rice

2 cups chicken broth (or water)

1 teaspoon cumin

Zest of 1 lime

Salt to taste

Toppings:

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup shredded lettuce (romaine or iceberg)

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Salsa or pico de gallo

Prepare the Chicken: In a bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, pepper, and lime juice. Add the chicken breasts, coating them evenly with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Rice: Rinse the rice under cold water until the water runs clear. In a saucepan, combine rice, chicken broth (or water), cumin, lime zest, and salt. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15-20 minutes (or according to package instructions) until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove chicken from the marinade and cook for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

        Assemble the Bowls: In each serving bowl, add a generous scoop of the cooked rice as the base. Top with sliced chicken, black beans, corn, diced avocado, cherry tomatoes, shredded lettuce, and cheddar cheese.
