2 salmon fillets (about 6 oz each)

1/4 cup teriyaki sauce (store-bought or homemade)

1 tablespoon olive oil

1 cup cooked jasmine rice

1/2 cup edamame (shelled)

1 small cucumber, thinly sliced

1/2 avocado, sliced

1 small carrot, julienned

1 green onion, thinly sliced

1 tablespoon sesame seeds

Salt and pepper, to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Salmon: In a shallow dish, place the salmon fillets and pour the teriyaki sauce over them. Marinate for at least 15 minutes, turning occasionally to ensure even coverage.

    Cook the Salmon: Heat the olive oil in a skillet over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and season lightly with salt and pepper. Sear the salmon for about 4-5 minutes per side, or until it reaches your desired doneness (the internal temperature should be around 145°F). In the last minute of cooking, pour the reserved marinade into the skillet to glaze the salmon.

      Prepare the Rice Bowl: While the salmon cooks, prepare the bowls. In each serving bowl, add a scoop of cooked jasmine rice as the base.

        Add Toppings: Layer the cooked edamame, sliced cucumber, avocado, and julienned carrots over the rice.

          Serve the Salmon: Once the salmon is cooked, place one fillet on top of the prepared rice bowl in each serving.
