Ingredients

2 medium zucchinis

1 cup of breadcrumbs (panko for extra crunch)

1/2 cup of all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Oil for frying (canola or vegetable oil)

Optional: Grated Parmesan cheese for garnish

Instructions

Prep the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice them into 1/4-inch thick rounds. Place them on a paper towel and lightly sprinkle with salt to draw out excess moisture. Let them sit for about 10 minutes, then pat dry with a paper towel.

Set up the Breading Station: In one bowl, place the all-purpose flour. In a second bowl, lightly beat the eggs. In a third bowl, combine the breadcrumbs, garlic powder, onion powder, paprika, salt, and black pepper.

Bread the Zucchini Rounds: Dip each zucchini slice into the flour, coating it well. Shake off any excess flour. Next, dip the slice into the egg, allowing the excess to drip off, and finally, coat it in the breadcrumb mixture, pressing gently to adhere the crumbs.

Heat the Oil: In a large frying pan, heat about 1/2 inch of oil over medium-high heat. To check if the oil is ready, drop a breadcrumb in; if it sizzles and bubbles, it’s time to fry.

Fry the Zucchini Chips: Carefully place the breaded zucchini slices in a single layer in the hot oil. Fry for about 2-3 minutes on each side until golden brown and crispy. Work in batches if necessary to avoid overcrowding the pan.

Drain and Cool: Once fried, transfer the zucchini chips to a plate lined with paper towels to absorb any excess oil. If desired, sprinkle with grated Parmesan cheese immediately while they're still hot.

Serve: Enjoy the crispy zucchini chips warm, served with a side of marinara sauce or a garlic aioli for dipping.
