1 lb boneless, skinless chicken thighs

2 tbsp olive oil

1/2 tsp onion powder

8 slider buns

1/2 cup coleslaw (optional, for topping)

Dill pickles (optional, for topping)

Fresh cilantro, for garnish

Marinate the Chicken: In a medium bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and toss to coat. Let them marinate for at least 30 minutes, or up to 2 hours in the fridge for more flavor.
