Ingredients
  

1 lb ground beef or turkey

1 packet taco seasoning

1 cup salsa

1 can (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/2 cup corn, drained

1 small red onion, finely chopped

1 ripe avocado, diced

1 cup sour cream

Fresh cilantro, for garnish

Jalapeño slices, for topping (optional)

Instructions
 

Preheat your oven to 375°F (190°C). Lightly grease a muffin tin.

    In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.

      Add the taco seasoning and salsa to the meat, stirring to combine. Cook for an additional 5 minutes until heated through.

        Unroll the crescent roll dough and separate it into individual triangles. Press each triangle into the bottom and up the sides of the muffin tin cups to form a pastry shell.

          Spoon a generous amount of the taco meat mixture into each pastry-lined muffin cup, filling them about 2/3 full.

            Sprinkle shredded cheddar cheese on top of each filled shell.

              Bake in the preheated oven for 12-15 minutes or until the crescent dough is golden brown and the cheese is melted.

                Once baked, remove the taco cupcakes from the oven and let them cool slightly.

                  Top each cupcake with black beans, corn, diced avocado, a dollop of sour cream, and sprinkle with chopped red onion and fresh cilantro. Add jalapeño slices if you wish for extra heat.

                    Serve warm and enjoy your delightful taco cupcakes!
