1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning (or homemade taco spice blend)

2 cups tortilla chips, slightly crushed

1 cup shredded cheddar cheese

1 cup sour cream

1 cup salsa

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

1 avocado, diced (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, cook the ground beef until browned, about 6-8 minutes. Drain excess grease if necessary.

      Add Ingredients: To the skillet, add the black beans, corn, diced tomatoes (with their juices), and taco seasoning. Stir well to combine. Cook for another 5 minutes until heated through.

        Layer the Casserole: In a 9x13 inch baking dish, spread half of the crushed tortilla chips on the bottom. Pour half of the meat mixture over the chips, then spread half of the sour cream over the meat. Sprinkle half of the shredded cheese on top.

          Repeat Layers: Add another layer of the remaining tortilla chips, followed by the remaining meat mixture, the rest of the sour cream, and finish with the remaining cheese on top.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with sliced green onions, chopped cilantro, and diced avocado if desired. Serve with salsa on the side.
