1 cup masa harina (corn flour)

1/2 cup warm water

1/4 teaspoon salt

1/2 pound ground beef (or ground turkey for a healthier option)

1/2 packet taco seasoning

1 cup refried beans (canned or homemade)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup sliced black olives (optional)

Prepare the Dough: In a mixing bowl, combine the masa harina and salt. Slowly add the warm water, mixing until a soft dough forms. Divide the dough into 4 equal portions, rolling each into a ball. Flatten each ball into a disk about 1/4 inch thick.

    Fry the Chalupa Shells: In a deep skillet, heat about 1 inch of oil over medium heat. Fry each disk of dough for about 1-2 minutes on each side or until golden brown and crispy. Remove from oil and let them drain on paper towels.

      Cook the Beef: In a skillet over medium heat, brown the ground beef, breaking it up as it cooks. Drain any excess fat, then add taco seasoning and a couple of tablespoons of water. Stir and let simmer for about 5 minutes until the meat is well-coated with seasoning.

        Prepare the Chalupa Filling: On each fried chalupa shell, spread a layer of refried beans, followed by a generous portion of seasoned ground beef.

          Add Toppings: Top each filled chalupa with shredded lettuce, diced tomatoes, and shredded cheddar cheese. Finish with a dollop of sour cream and sprinkle black olives on top if desired.
