Sweet & Spicy Pineapple Chicken – A Tropical Delight!

4 boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned pineapple in juice)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust to taste)

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon vegetable oil

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, diced

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Cooked jasmine rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the soy sauce, honey, sriracha, grated ginger, and minced garlic. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

    Prepare the Salsa: If using fresh pineapple, blend it until smooth, or chop it into small bits if you prefer a chunkier texture. Combine pineapple, diced red and green bell peppers, and diced red onion in a separate bowl. Drizzle with a bit of olive oil, and season with salt and pepper to taste. Mix well and set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the skillet. Sear on each side for about 4-5 minutes or until golden brown and cooked through. Make sure to cook in batches if necessary to avoid overcrowding.

        Add Pineapple and Veggies: Once the chicken is cooked, push it to one side of the skillet. Add the pineapple salsa mixture to the other side and sauté for about 3-4 minutes, until the vegetables are tender and the pineapple releases some of its juices.

          Combine and Simmer: Stir the chicken back into the skillet with the pineapple and vegetables. Allow everything to simmer together for another 2-3 minutes, ensuring the chicken is coated in the juices. Adjust seasoning, adding more sriracha if you want extra heat.

            Serve: Remove from heat and serve the sweet and spicy pineapple chicken over a bed of jasmine rice or quinoa. Garnish with sliced green onions and sesame seeds for the perfect finish.
