1 lb (450g) boneless, skinless chicken thighs

1 cup fresh pineapple, diced (or canned pineapple in juice, drained)

1/2 cup bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

3 cloves garlic, minced

1 inch fresh ginger, grated

1/4 cup soy sauce (or tamari for gluten-free)

1/4 cup honey or maple syrup

2 tablespoons sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons vegetable oil

Salt and pepper to taste

Chopped fresh cilantro and lime wedges for garnish

Cooked rice or quinoa for serving

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, honey, sriracha, rice vinegar, garlic, ginger, and a sprinkle of salt and pepper. Add the chicken thighs and make sure they are well coated with the marinade. Let it sit for at least 30 minutes (or refrigerate up to 2 hours).

    Prepare the Vegetables: While the chicken is marinating, chop your pineapple, bell pepper, and onion. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, remove chicken from the marinade (but reserve the marinade) and cook the chicken for about 5-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and let it rest before slicing.

        Sauté the Vegetables: In the same skillet, add the bell pepper and onion. Sauté for 3-4 minutes until they soften slightly. Add the pineapple and cook for an additional 2 minutes until warmed through.

          Create the Sauce: Return the reserved marinade to the skillet. If you'd like a thicker sauce, mix cornstarch with 2 tablespoons of water and add it to the marinade. Stir constantly until the sauce starts to thicken, about 2 minutes.

            Combine Everything: Slice the cooked chicken into strips and return it to the skillet, stirring to coat everything in the sauce. Allow the dish to simmer for an additional minute for the flavors to meld.

              Serve: Serve the Sweet & Spicy Pineapple Chicken over rice or quinoa. Garnish with fresh cilantro and lime wedges for an extra burst of flavor.
