Sweet Raspberry Oatmeal Bars

1 cup all-purpose flour

½ cup packed brown sugar

½ cup granulated sugar

1 teaspoon vanilla extract

For the raspberry filling:

2 cups fresh or frozen raspberries (if using frozen, thaw and drain excess liquid)

½ cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

½ teaspoon vanilla extract

Optional for drizzling:

½ cup powdered sugar

1-2 tablespoons milk or water

½ teaspoon vanilla extract

Prepare the Filling: In a medium saucepan over medium heat, combine the raspberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook, stirring gently until the mixture begins to bubble and thicken (about 5-7 minutes). Remove from heat and let it cool.

    Make the Crust and Topping: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, salt, baking soda, and cinnamon. Stir until evenly mixed. Add the melted butter and vanilla extract, and mix until crumbly.

      Press and Layer: Grease a 9x9 inch baking pan. Reserve about 1 cup of the oat mixture to use as topping. Press the remaining oat mixture into the bottom of the prepared pan to create an even crust.

        Add Filling: Spread the cooled raspberry filling over the oat crust in the pan, smoothing it out with a spatula.
