2 racks baby back ribs (about 2-3 lbs each)

1 cup peach preserves

1/2 cup apple cider vinegar

1/4 cup soy sauce

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon garlic powder

1 tablespoon onion powder

Salt and pepper to taste

Fresh peaches, for garnish (optional)

Chopped scallions, for garnish (optional)

Instructions
 

Prepare the Ribs: Preheat your oven to 300°F (150°C). Remove the silver skin from the back of the ribs for better tenderness. Rinse the ribs under cold water and pat them dry with paper towels.

    Make the Rub: In a small bowl, mix together smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub this spice mixture all over the ribs to coat evenly.

      Create the Sauce: In a medium saucepan, combine peach preserves, apple cider vinegar, soy sauce, Dijon mustard, Worcestershire sauce, and a pinch of cayenne pepper. Stir everything together and bring the mixture to a simmer over medium heat. Cook for about 5-7 minutes, until the sauce thickens slightly.

        Bake the Ribs: Place the ribs on a large baking sheet lined with aluminum foil. Cover them tightly with another piece of foil. Bake in the preheated oven for 2.5 to 3 hours, until the ribs are tender and the meat pulls away from the bone easily.

          Glaze the Ribs: Once the ribs are done baking, remove them from the oven and discard the top layer of foil. Brush a generous amount of the peach BBQ sauce all over the ribs.

            Caramelize the Ribs: Preheat your grill or broiler to high heat. Place the glazed ribs on the grill for 5-10 minutes, turning occasionally. Keep an eye on them to prevent burning, and brush with more sauce as desired until the ribs are nicely caramelized and sticky.

              Slice and Serve: Remove the ribs from the grill and let them rest for about 5 minutes. Slice between the bones and serve with extra peach BBQ sauce on the side. Garnish with fresh peach slices and chopped scallions if desired.
