2 lbs boneless, skinless chicken thighs

1 cup pineapple juice

1/2 cup soy sauce

1/4 cup brown sugar

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1/2 teaspoon black pepper

1/2 cup red bell pepper, chopped

1/2 cup green bell pepper, chopped

1 cup fresh pineapple chunks (or canned, drained)

1/4 cup green onions, sliced (for garnish)

Cooked rice or quinoa, for serving

Instructions
 

In a bowl, mix together pineapple juice, soy sauce, brown sugar, garlic, ginger, and black pepper until well combined.

    Place the chicken thighs in the crockpot and pour the sauce mixture over the top, ensuring the chicken is well coated.
