Sweet Corn & Zucchini Pasta Salad

Ingredients
  

8 oz (2 cups) fusilli pasta

2 medium zucchinis, diced

1 cup sweet corn (fresh, frozen, or canned)

1 bell pepper (red or yellow), diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tbsp apple cider vinegar

1 clove garlic, minced

1 tsp Dijon mustard

Salt and pepper to taste

Crumbled feta cheese (optional), for garnish

Instructions
 

Cook the Pasta:

    - In a large pot of boiling salted water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

      Sauté the Zucchini:

        - In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced zucchini and sauté for about 3-4 minutes until tender but still slightly crisp. Remove from heat and allow to cool.

          Prepare the Dressing:

            - In a small bowl, whisk together the remaining olive oil, apple cider vinegar, minced garlic, Dijon mustard, salt, and pepper until well combined.

              Mix Ingredients:

                - In a large mixing bowl, combine the cooled pasta, sautéed zucchini, sweet corn, bell pepper, cherry tomatoes, red onion, and fresh basil.

                  Add the Dressing:
