1 cup fresh or frozen sweet corn kernels

1 cup all-purpose flour

1 cup buttermilk (or milk mixed with 1 tbsp lemon juice)

1 cup shredded sharp cheddar cheese

2 large eggs

1 tablespoon sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

2 tablespoons melted butter or vegetable oil

2 green onions, finely chopped (optional)

Additional butter or oil for the skillet

Prepare the Batter: In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.

    Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter or oil until fully combined.

      Combine Mixtures: Slowly pour the wet mixture into the dry ingredients, stirring gently to combine. Do not overmix; it's okay if there are a few lumps.

        Add Corn and Cheese: Fold in the sweet corn, shredded cheddar cheese, and green onions (if using) until evenly distributed in the batter.

          Preheat the Skillet: Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to the skillet to coat the surface.
