Sweet Corn & Bacon Pasta Bake

300g penne pasta

200g sweet corn (canned or frozen)

200g bacon lardons

1 medium onion, diced

3 cloves garlic, minced

300ml heavy cream

100ml chicken or vegetable broth

100g grated Parmesan cheese

150g shredded mozzarella cheese

1 teaspoon dried Italian herbs (oregano, thyme, or basil)

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot, bring salted water to a boil, then add the penne pasta. Cook until al dente according to package instructions, usually about 8-10 minutes. Drain and set aside.

      Cook the Bacon: In a large skillet over medium heat, add the bacon lardons. Cook until they are crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels.

        Sauté the Aromatics: In the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.

          Combine Ingredients: In the skillet, add the cooked bacon, sweet corn, heavy cream, chicken or vegetable broth, Parmesan cheese, and Italian herbs. Season with salt and pepper to taste. Stir to combine and let it simmer for 2-3 minutes until slightly thickened.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked penne pasta with the cream and corn mixture. Mix well until the pasta is evenly coated.

              Assemble the Bake: Transfer the pasta mixture to a greased baking dish (approximately 9x13 inches). Sprinkle the shredded mozzarella cheese evenly over the top.

                Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
